\u201cBa Sau Mien Tay\u201d<\/strong> is the brand inspired by the life of Mrs. Sau Mai<\/strong> from Long Xuyen Ward, An Giang Province, Vietnam \u2013 a land of rivers in the Mekong Delta. Her husband was a farmer, and together they raised five children.<\/p>

Back in the 1970s\u201380s, when life was still full of hardships, every family meal was a careful gathering of what her husband caught from the river. The spiny goby fish, sand goby fish, climbing perch fish\u2026 under her skilled hands, they became rich, flavorful braised fish dishes \u2013 infused with the essence of the Mekong Delta, warming the hearts of her children.<\/p>

Those humble meals nourished not only her family but also the dreams of her youngest son, Pham The Long<\/strong>. At every meal, he would exclaim:<\/p>

\u2013 \u201cMom, your braised fish is so delicious! When I grow up, I\u2019ll bring this dish to the whole world!\u201d<\/p>

He officially registered the brand \u201cBa Sau Mien Tay\u201d<\/strong> <\/em>as a tribute to the authentic culinary spirit of his hometown, and named the project \u201cCa Kho Ba Sau\u201d (Ba Sau Claypot Stewed Fish)<\/strong><\/em> \u2013 a warm, familiar name that recalls the very roots of his mother\u2019s kitchen.<\/p>

At first, the name \u201cCa Kho Ba Sau\u201d (Ba Sau\u2019s Claypot Stewed Fish)<\/strong> was chosen to honor the signature family recipe of Mrs. Sau Mai. Yet in her kitchen, it wasn\u2019t only fish that carried memories, it was also her Stewed Pork Meat with Egg (Thit Kho Tau)<\/strong>.<\/p>

In the Mekong Delta during the 1970s and 1980s, fish was plentiful, caught daily from rivers and rice fields. But pork was a luxury, hard to find, expensive, and precious.<\/p>
